Regarding the interference being RF, if you watch the video carefully, you see that he has reversed the roles of "attacker" and "victim". He is feeding an audio signal through the cable and picking up an electric field outside the cable. By the reciprocity principle, that means an electric field outside the cable could induce a noise signal in the cable. But the noise in this case is clearly audio frequency.
