I am welding two plates using TIG machine welding. Before start welding I adjust the current value (i.e. 200 A) and voltage is 20 V. But, the real values of current and voltage will be changed when pass through the plates because of temperature changes. So, how can I measure the real values of current and voltage verses time to get the graphs? I need the full setup of that.

I hope my question is clear.
