What are these schematic symbols in the HCPL3700? (square with arrows and overlapped circle)
The square with arrows is hysteresis, as evidenced by some of the electrical characteristics of the device.
The overlapping circles are a current source.

Crystal oscillator in schematics
Since crystals usually do not have a polarity, they're just there since the CAD tool requires pin numbers for generating the PCB or writing netlists for simulators.
